Additional to its delicious fruit, coconut by-products are widely traded throughout the world. Desiccated coconut, coconut chips, coconut oil, coconut water, coconut milk and coconut cream are the most popular coconut by-products. A famous Philippines proverb says; 

'If you could count the stars, then you could count all the ways the coconut serves us.'

Desiccated Coconut is the dried, unsweetened, shredded white meat of the coconut kernel, produced from fresh coconut. Desiccated Coconut is also called coconut meat which has been flaked or shredded and then desiccated to remove as much wetness as possible. It is used as an ingredient in many sweet bakery, pastry and chocolate products, but also in some savoury Asian dishes.

Desiccated Coconut is rich in fat, content ranging from 35-65%

The value of Desiccated Coconut lies at its fat content, with higher fat % meaning more expensive product. 

Desiccated Coconut is categorized into its fat content;

  • High Fat – a minimum of 60% fat, 
  • Reduced Fat – between 55-60% fat, 
  • Low Fat – less than 55% fat

Desiccated Coconuts are also graded by its cutting size;

  • Extra Fine Grade – smallest particle size
  • Fine Grade – small particle size
  • Medium Grade – bigger particle size

Another by-product of coconut, Coconut Chips, are a ‘ready to eat’ snack food. Dehydrated mature coconut kernel slicers are dipped in osmotic medium like sugar syrup is called Coconut Chips. Coconut Chips are not fried in oil, don’t contain preservatives and there is no loss of flavor or nutrient in the kernel.

Desiccated Coconut is produced in almost all coconut-producing countries, but most quantities are produced in Southeast Asia, with the Philippines and Indonesia being the main processors.

The EU is a large importing region for Desiccated Coconut, accounting for a 30% share of the world’s total imports, followed by the US, Singapore and the Russian Federation.
